1. Preheat oven to 300° F and line a baking sheet with parchment paper. 2. Using an electric mixer (a standing mixer works best), beat egg whites, salt, and lemon juice until soft peaks begin to form—approximately 3 minutes. 3. In a small bowl, combine the spices (including pepper) and sugar. Add them to the egg whites one tablespoon at a time and continue to beat for another few minutes, until the meringue is stiff and can stand up on its own. 4. Fill a pastry bag with the meringue and form small circles on the lined baking sheet about 1.5 to 2 inches in diameter. You can also spoon the meringue onto the sheet if you don’t have a pastry bag. Meringues will stay in the shape you form. 5. Bake for 20–25 minutes until golden and crisp. Sprinkle with cinnamon if desired, and let cool before serving.
