Time: 30 hours
Serving size: 3 bite-sized balls
Preheat the oven to 375°F. Line two large baking sheets with foil. Set aside. Heat the coconut shreds in a large skillet over medium heat, stirring frequently, until lightly toasted. Remove from heat and mix in 1 teaspoon of cayenne pepper. Drain the pineapple, saving the juice. Move the pineapple chunks to a large bowl. Add the remaining 1 teaspoon of cayenne pepper, ginger, garlic powder, acacia fiber powder, minced jalapenos, beaten eggs and pork to the bowl with the pineapple. Mix well. Prepare an assembly line of reserved pineapple juice, bowl of coconut milk and the pan of spiced coconut. Form 1 tablespoon of pork into a ball. Dip in pineapple juice and then coconut milk. Roll in the spiced coconut, and place on prepared pan. Repeat. Bake for 15 minutes. Remove from oven and let cool before enjoying.
